After this soak, the vat temperature is gradually increased to initiate alcoholic fermentation, which takes place during an extended maceration. Once fermentation is complete, the wine remains on its lees for eight months to build depth and texture. It is then transferred to French oak barrels for a further 12 months of ageing, followed by six months in bottle to refine its
